A few of the films I have added either don't have the covers of my DVDs, or they just don't have covers.

The bigger issue is that the covers actually do exist as jpegs in the correct folder, but I am unable to add them using the cover image manager under edit entry.

Once, it worked, although this was the wrong image and just a test I was trying. Every time I try to add the correct image, it just does nothing at all.

Any hints?

Have a look at the database directly with Access, please. Now check if the wrong covers have the correct filename (movie-id - movie-name).
I assume that due to a corrupted import the cover field has a wrong movie-id.
Depending on the amount of movies in your database I would suggest to remove those "broken" covers or all covers and re-import them again. Maybe it would be a good idea to make a duplicate of your used script and deactivate all fields except for the covers...
